In the 19th Century a saloon was any establishment that provided food or drink. The Volunteer Refreshment Saloons served no alcohol. What they did dispense was coffee and heaping plates of food as good as the best hotels to the passing Union soldiers. These spontaneous gatherings of Southwark neighbors built two organizations, the Cooper Shop and the Union Refreshment Saloon, which operated throughout the Civil War and several months past its end as the soldiers returned home. Besides food, they provided fresh water for washing, reading and writing materials, and hospital care. What a treat to read something new about the Civil War and efforts of ordinary people to aid the traveling Union soldiers and sometimes their families and refugees right in the Southwark (now Queens Village, etc.) area of Philadelphia! This impeccably researched book tells about the volunteers who set up refreshment saloons to provide food, shelter, medical care and compassion to weary Union soldiers who often crossed the Delaware River on the ferry from Camden, New Jersey. I heartily recommend this book.

This is a very interesting book about a piece of American history I was not familiar with. Ms. Bisaha has unearthed a great deal of information about the volunteer refreshment saloons of Philadelphia during the civil war. It is a fascinating and readable book that I highly recommend.
I had never heard of the Refreshment Saloons and loved learning about them. This book about the Refreshment Saloons in Philadelphia during the civil war brings to life the Philadelphians who provided food, refreshment and eventually medical care to Union troops passing through our city. The book is impeccable researched. It also includes several chapters that are well written historical fiction. The letters from some of those served by the Refreshment Saloons add fascinating insight into the history of the era.
The information was very interesting as there is little written about the families involved in the refreshment saloons. Being a descendant of William cooper, I noted some errors such as his wife's name and that William did receive a presidential pardon from Eastern State Penitentiary. I'm not sure the relations of William are correct. All in all there's some good information to be found.
